Summer produce is so good right now, most nights for dinner I find myself putting a bunch of it on a plate and calling it a day. Last night, I made a caprese of sorts: large chunks of tomato interspersed with fresh mozzarella cheese and peaches. I threw some white beans and pistachios on top for more protein, then drizzled the whole thing with olive oil, balsamic vinegar and honey. Oh, and flaky salt.
